Leprechaun in Paradise

St Patrick’s Day is next week, when we all can celebrate Irish traditions. Whether it’s soda bread and whiskey butter (a favorite), Guinness beer, or hunting for the crafty Leprechaun and his pot of gold, we can leap like a Celtic dancer into the holiday.

Since the weather is getting warmer, thoughts turn to pineapple and coconut with a lighter flavor than the heavy drinks you may be familiar with for the Irish saint.

Leprechaun in Paradise

So this year, I’m passing along this tropical twist on a green drink to enjoy during the festivities — Leprechaun in Paradise!

Ingredients:

1 shot of Malibu coconut rum

1 shot of vodka

Splash of blue curaçao

Pineapple juice (or orange juice).

Add all ingredients into a shaker filled with ice and mix well. Pour into a glass full of ice and enjoy your very green, very tropical drink.
